1 kg matumbo (make sure that you are given mainly white intestines);
2 medium tomatoes; 1 onion; 1 bunch of coriander; 2 cloves garlic;
1 piece ginger; 250 ml milk (fresh or sour); 1 cup of ground groundnuts.
Wash matumbo with warm water, bring to the boil and cook for about
30 minutes. Add all other ingredients and leave to simmer for another
30 minutes. Serve. (No need to use oil or fat in this recipe.)
