Milk from 2½ cups grated coconut (squeeze water through the coconut
2-3 times); 2 cups moringa peas; 1 piece ginger; 1 garlic clove; 1 diced onion;
4 tbsp oil; 1½ cups grated coconut flesh; 2 hard boiled eggs; salt.
Place the peas and 1 cup of coconut flesh in boiling water for 30 seconds,
drain, then mix with coconut milk, half the ginger and garlic, and the oil.
Bring to the boil and cook for 20 minutes or until peas are soft.
Fry the remaining 1½ cups coconut flesh until brown. Fry rest of ginger
and garlic. Dice the eggs. Mix everything together, heat through and serve.
